Pumpkin Leek Soup
Pumpkin Leek Soup
I roughly used one medium to large pumpkin,
1 liter chicken stock liquid,
1 or 2 leeks chopped,
3 garlic gloves, one onion, 3 tablespoons olive oil,
1 tablespoon butter salt and pepper, nutmeg a sprinkle.
METHOD: chop pumpkin in small pieces, chop garlic, onion, and leek diced, then add olive oil and butter in pot until melted, sauté onion, garlic, and leek then add pumpkin pieces and sauté 10 minutes. Add stock, or enough to cover the pumpkin, add salt & pepper to taste, and sprinkle some nutmeg in. Boil till tender, then I vitalize it all, or in a blender and put back in pot add more stock if you didn't want it to thick enjoy!
